No Egg Bread Pudding

Since I am allergic to egg yolks, I am always looking for a recipe without them. Try this one

No egg bread pudding
14 ounce can sweetened condensed milk
6 ounce can evaporated milk
3/4 cup fat free milk
1 teaspoon cinnamon
1 teaspoon vanilla
6 cups day old whole wheat bread, Cut in 1-inch cubes
1/2 cup chopped walnuts
4 ounces cream cheese, cubed

Coat a 9 by 13-inch baking pan with cooking spray. In large bowl, stir together condensed milk, evaporated milk, fat free milk, cinnamon and vanilla. Add bread cubes and gently stir to coat. Let soak at least 5 minutes. Then spread mixture evenly in prepared pan. Top evenly with chopped walnuts. Dot with cream cheese, pressing down slightly into bread mixture. Bake in preheated 350 F. oven until edges begin to crisp and brown and the center is set, about 35 minutes. Using a small spatula or knife, gently spread the cream cheese. Let rest for 20 minutes. If desired sprinkle with more cinnamon. Serves 6
