Deer Processing Made Simple: Free Class in Corryton

Hunters and outdoor enthusiasts are invited to attend a special Deer Processing Class presented by Union County Extension’s Family and Consumer Science Agent, with guest presenters, on Saturday, October 11th, 2025, at 11:00 a.m. at Johnson’s Deer Processing, 520 W Mountain View Rd, Corryton, TN 37721.

This free, hands-on workshop will feature a live demonstration on how to properly field dress a deer and how to break it down into different cuts of meat. Participants will also receive information on venison recipes and how to safely preserve venison so nothing goes to waste.

A Little Picker-Upper

It had been a long, hot day. When I showed up at the American Legion Post 212 for their monthly free dinner, I was tired, not particularly hungry and not feeling very sociable. But then I opened the door and the aroma of wonderfully prepared BBQ came drifting out. That changed everything! The food was wonderful. Not only large quantities of pulled pork, but there was chicken, delicious cole slaw, and homemade beans with bacon (yum!). Desserts included cookies and chocolate cake. Margo McCaffery and Debbie Boeck, members of the Union County Veteran Volunteers, prepared this feast.

Lions to serve free spaghetti dinner before the Opry

The Union County Lions Club will be hosting a free homemade spaghetti dinner for all Union County citizens on Saturday, September 7, at 5:30 p.m. at Union County High School. Dinner will include salad, Italian bread, drinks and desserts, and will be held just before the Union County Opry presents the Lonesome River Band. This band has been touring for 42 years and is one of the most respected names in Bluegrass.

Veterans Menu April 1

Calling all Veterans! What better way to celebrate April Fool’s Day than to be at the American Legion building at noon to feast on Veteran Volunteer Margo McCaffery’s Famous American Goulash! Sometimes called slumgullion, American goulash is a comfort food dish based on the Hungarian goulash stew. The ground beef, tomato and macaroni are in a beautifully seasoned tomato sauce. Shredded cheese and sour cream will be available for garnish.

Menu for Veterans March 4 at High Noon

Military Veterans! You are invited to join Post Commander Darrell White and other Union County veterans at High Noon on Monday March 4 at the American Legion Hall on Veterans Rd. An Italian experience is planned with homemade Lasagna, bread, salad and dessert. Meals will be served on the first floor. There is no charge for this meal. For those who would like to attend, the monthly meeting of the American Legion New Liberty Post will be held after the luncheon at 1:00 upstairs in the building.
