Veterans Appreciation Dinner

Fred England's Roadkill Cafe

Wilson Park 12:00 – 4:00 November 7, 2026

The American Legion Post 212 invites you to celebrate the more than 1,200 Union County Veterans and all Veterans on Saturday, November 7, from noon to 4:00.

This is a FREE event for all Veterans, their families, friends, neighbors, and anyone else who appreciates the work and sacrifices these men and women have made for us and our country. We honor and thank our Veterans!

Pit Master Fred England (who calls himself “just a dang ol’ cook”) will again offer pulled pork sandwiches. Fred volunteers with Mercy Chefs, a faith-based, non-profit disaster and humanitarian relief organization. The process of preparing the pork butts starts with the marinade. Fred applies the secret seasonings to the meat and leaves the pork in the fridge overnight. It then takes about 10-12 hours to smoke the meat properly (which means Fred doesn’t get much sleep)! But he stresses that time isn't what matters; temperature is. He smokes his meat at 240 degrees, and the middle of the pork butts needs to register 205 degrees. Pretty impressive! If you or your kids are not particularly fond of BBQ, there will be hot dogs, and chicken tenders.

The main differences between grilling and smoking are the temperature, cooking time, and types of food cooked. Grilling is done at a higher temperature (usually between 400-550 degrees), while smoking is done around 225-250. Grilling is quick, while smoking takes several hours. Smoking uses indirect heat and smoke to cook the meat at low temperatures. It enhances the food's flavor and texture. And best of all, it keeps meat tender. Yum!

Fighting between the Allies and Germany in World War I stopped on the 11th hour of the 11th day of the 11th month. November 11, 1918, was proclaimed the "War to End All Wars". Veterans Day, originally called Armistice Day, is still observed on November 11th every year. It honors all of America’s veterans for their patriotism, love of country, and willingness to serve and sacrifice for the common good. Our good.

So come eat fabulous food, listen to wonderful, toe-tappin’ music, enjoy the company of your neighbors, and celebrate all Veterans.

The festivities will end at 4:00, but anyone who wants to volunteer for clean-up and takedown is welcome and much appreciated! Thank you for coming to celebrate and appreciate our Veterans!
