Searchlight Rice Cakes

I found this recipe years ago in a cookbook my husband bought from a traveling salesman, when he worked at a lumber yard. Back in the day, men came through selling just about everything from encyclopedias to cookbooks. A huge dictionary came with it. That is long gone, but I still have the cookbook. I think it was published in 1946. This is an easy way to make rice cakes.

Introducing the Union County Lions Club

The Union County chapter of the Lions Club was chartered in October 2008 and has been serving our community well year after year. Not sure what the Lions Club is or what it does? It is a club composed of members of the community who embrace the motto “We Serve” in a variety of ways. Local Lions Club programs include vision conservation, hearing and speech conservation, diabetes awareness, youth outreach, international relations, environmental issues, and much more.

UCBPA 2021 Scholarship Benefit Golf Classic

For over 25 years UCBPA has been hosting a golf tournament to fund scholarships for graduating Union County seniors. To date UCBPA members have raised over $113,000 to support the educational goals of over 115 students. UCBPA Charities, Inc, our 501c3 non-profit, administers the funds for the Jeffreys Memorial Academic Scholarship ($3,750), the Career & Technical Scholarship ($1,000), and the Founders Scholarship for Service ($500).

University of Tennessee Field Days Planned

The University of Tennessee Institute of Agriculture is holding a bevy of educational events in June, including five that are sure to be of broad interest throughout the state and region. Three of these five events are scheduled to occur on site at UT AgResearch and Education Centers, with physical distancing and other arrangements in place to ensure a safe environment for attendees.

Red Devils Back on Track

The Red Devil baseball bounced back from a loss earlier in the week by pounding out 18 runs on 8 hits to defeat the Cougars. Ty Edds got things started in the first inning by beating out a bunt and 2 stolen bases. Then scored on an infield hit by Aiden Bowman to start the rout.

The Church Fan

I was totally caught off guard at my daughter’s church.
A few years ago, Sara joined another church and invited me to attend a service with her. When we sat down, I couldn’t believe my eyes. “I haven’t seen one of these since I was a girl!”
“Uh…you have pews at your church momma.”
“Not the pews.” I reached up and plucked a fan out of the wooden box on the backside of the pew in front of us. “These.” I began to wave it in front of my face.

A Picture is Worth a Thousand Words

I heard a story on the radio on my way to work this morning that is worth retelling. It seems there was a wife who was looking at pictures on her husband’s phone. Who knows where the husband was while this was occurring? Perhaps he was mowing the yard. Maybe he was in the shower. The wife was outraged that her husband of so many years secretly had pictures of this young female on his personal phone. This was obvious evidence that he was being unfaithful to her. When the husband made his appearance, a bitter confrontation followed.
